The Yiben tea garden sits on Dong Yan mountain in Nantou county, Taiwan, at an altitude of about 1300 meters. The plantation lies almost entirely in the shade of maple trees and is tended by master Shi Shan Qin.
This is a GABA oolong — a tea produced using a special low-oxygen fermentation process. Light and imperial-grade, with a soft taste carrying notes of caramel, chocolate, maple syrup, fresh bread, raisin, cherry, and apple.
Brew it gaiwan-style or in a small teapot with hot water, and the maple syrup aroma comes through especially clearly.
