Bai Hao Yin Zhen Silver Needle — White Tea, Fujian

Bai Hao Yin Zhen (Silver Needle) is the most refined luxury-grade white tea from Fujian Province, China. Historically it was the tea of Chinese aristocrats — few could afford it.

Only the most prized top bud goes into it — no leaves. The very bud that is covered in thousands of tiny white downy hairs. 500 g of raw tea buds yields just 100 g of finished tea, and the production itself is extraordinarily labour-intensive, which explains the price.

Flavour profile

• Geranium and meadow flowers
• Cucumber and cut grass
• Watermelon and mango in the finish
