Yunnan White Tea Xiao Bai Tian 'Moonlight', 2021, 100 g

Xiao Bai Tian ("Little White Sweetness") is a remarkable example of aged white tea from Yunnan province, pressed into a compact 100-gram cake in 2021.

The material is sun-dried white tea from large-leaf Yunnan tea trees.

The cross-section reveals voluminous leaves in natural shades of green, khaki and brown, generously dotted with silvery-white downy buds.

Thanks to several years of proper ageing the tea has shed its raw grassiness, gaining a deep, juicy, smooth flavour profile.

Its bouquet weaves together notes of wildflowers, linden honey, sweet dried apples and a light hint of birch sap.

The brew leaves a long, almost nectar-sweet finish.
