Kuding is sold in every tea shop in China, yet it is not tea. It is made from the young leaves of the broad-leaf holly tree: the leaves are twisted into slim shoots, processed and brewed just like tea leaf.
The taste is bright and herbaceous with a distinct bitter edge. Brew it attentively: go easy on the number of shoots, the water temperature and the steeping time, or the cup turns very bitter. Full brewing directions are printed on the pack.
Tasting notes: green pea, cut grass, pine needles, menthol.
