Chinese karkade is loose dried petals of the Sudanese rose (hibiscus). The infusion comes out bright red to deep burgundy, sweet-and-sour with a pronounced fruity tartness.
Pour hot water over the petals and steep until the colour is deep. Served cold it tastes like a fruit cordial — brew it stronger, chill, and pour over ice.
Karkade is considered the national drink of Egypt, and it is the Sudanese rose that gives it that ruby colour and tang.
