Butterfly Pea Flower Tea (Anchan)

Anchan (butterfly pea) flowers come from the tropical vine Clitoria ternatea, best known for turning an infusion a vivid blue. The plant originates from Ternate island in Indonesia, and this batch is grown in China.

The taste is mild and grassy, almost neutral, making it a nice change of pace from regular tea since it's naturally caffeine-free. Beyond brewing it on its own, the petals are also used as a natural dye — they give a rich, bright blue color, and adding a splash of lemon turns the drink pink-purple right before your eyes.
