Sencha is the most popular tea in Japan, accounting for roughly 3/4 of the country's entire tea production.
Sencha resembles Chinese green teas in neither processing, appearance, nor taste. The leaves are steamed rather than pan-fired, then dried and rolled.
The leaves are delicate and crumble easily, so even top grades may contain a little dust — that is completely normal.
