Chahai translates as "sea of tea". This small vessel plays a very large role in the ceremony, since it is the way tea travels from the gaiwan to the cups.
The chahai is the pitcher you pour into after brewing. It distributes the tea evenly so every cup tastes the same, and it stops the tea over-brewing because the liquor leaves the gaiwan or teapot straight away. It is also handy when serving several people at once — the chahai pours cleanly, without spills.
In ancient China porcelain was called "white gold" for its purity and translucency. White is associated in China with clarity of thought and new beginnings.
