The Suke Kuto drying station of Sookoo Group stands a few minutes walk away, so the cherries reach the beds fresh. The process is led by Ture Wadji, known as the King of Guji.
Cherries are carefully sorted and laid out on African beds, then turned 5-6 times a day so the drying stays even and free of unwanted fermentation.
The cup is rich, smooth and full.
